Instructions
Preparation
Preheat the oven to 350°F (175°C).
In a large bowl, mix together the peanut butter, granulated sugar, brown sugar, softened butter, and egg until smooth.
In a separate bowl, combine the flour, baking soda, and salt. Gradually add these dry ingredients to the peanut butter mixture. Stir until well combined.
Fold in the chocolate chips until they are evenly distributed in the dough.
Assembly
Scoop out small amounts of dough and flatten them slightly. Place a small dollop of peanut butter in the center of each flattened dough piece.
Carefully fold the edges of the dough over the peanut butter filling, ensuring it is fully enclosed, and shape into a ball.
Baking
Place the cookie balls on a baking sheet, making sure to leave some space between them.
Bake for 10 to 12 minutes, or until the edges are set.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, ensure butter is softened, don’t overmix the dough, and watch the cookies while baking to prevent over-baking. You can also refrigerate the dough if it's too sticky.
