Instructions
Preparation
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Cooking the Chicken
In a large skillet, melt 2 tablespoons of butter over medium-high heat. Season the chicken breasts with salt and pepper.
Add the chicken to the hot skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and cover it with foil to keep warm.
Making the Garlic Butter Sauce
In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1-2 minutes until fragrant.
Pour in the lemon juice and zest, stirring to combine.
Combining Pasta and Sauce
Add the cooked pasta to the skillet, along with the heavy cream and grated parmesan cheese. Mix everything until the pasta is well-coated and heated through. Season with salt and pepper to taste.
Serving
Slice the chicken breasts and place them on top of the creamy pasta. Drizzle the garlic butter sauce over the chicken and garnish with freshly chopped parsley.
Notes
Store any leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a microwave or on the stove over low heat. Add a splash of cream or broth if pasta seems dry after reheating.
