Instructions
Preparation
Mix together olive oil, minced garlic, dried rosemary, dried thyme, lemon juice, salt, and pepper in a bowl to create a marinade.
Coat the chicken breasts with the marinade and let it marinate for at least 30 minutes or overnight in the fridge.
Cook the Creamy Mash
Place quartered potatoes in a large pot filled with salted water.
Bring water to a boil and cook potatoes for 15-20 minutes, or until tender.
Drain potatoes and return them to the pot. Add unsalted butter and heavy cream; mash until creamy.
Season with salt and pepper and mix in fresh herbs if desired.
Roast the Carrots
Preheat the oven to 400°F (200°C).
Toss carrot sticks with olive oil, honey, salt, and pepper.
Spread carrots on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
Remove chicken from the marinade, allowing excess to drip off, and cook for 6-7 minutes on each side or until internal temperature reaches 165°F (75°C).
Serve
On a plate, start with a generous scoop of creamy mashed potatoes, add the roasted carrots, and lay the grilled chicken on top.
Drizzle any remaining juices from cooking over the chicken and garnish with fresh herbs if desired.
Notes
Do not rush the marinade for best flavor. Keep an eye on the potatoes to avoid overcooking and check chicken temperature with a meat thermometer.
