Instructions
Preparation
Start by rinsing the chicken breast and then pat it dry with paper towels. Dice the chicken into bite-sized pieces.
Marinating
In a bowl, combine olive oil, garlic, paprika, salt, black pepper, and oregano. Add the diced chicken and toss until all pieces are well coated in the marinade.
Breading
Set up two bowls. In one bowl, place the beaten egg. In the other bowl, add the breadcrumbs. Dip each marinated chicken piece into the egg, allowing the excess to drip off, then roll it in the breadcrumbs until fully covered.
Cooking
Heat a skillet over medium heat. Add a splash of olive oil. Once hot, add the breaded chicken pieces in a single layer. Cook for about 5-7 minutes on each side or until golden brown and fully cooked through.
Serving
Once cooked, transfer the chicken to a plate lined with paper towels to absorb any extra oil. Garnish with chopped parsley and serve with your choice of dipping sauce.
Notes
For storing, allow the cooked chicken to cool down, then place in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Avoid overcrowding the pan while cooking for the best results.
